CHICKEN AND SPINACH SALAD

This is a wonderful summer recipe that uses both fresh strawberries and spinach.

6 oz. spinach, fresh
2 oranges, peeled and cut into chunks
2 cups cooked and cubed chicken
2 cups strawberries

Dressing:
3 Tbl. red wine vinegar
3 Tbl. orange juice
1 1/2 Tbl. oil (canola)
1/4 tsp. dry mustard
1/3 tsp. poppy seeds

Mix dressing ingredients and refrigerate. Wash spinach and tear into bite size pieces. Add oranges, chicken and strawberries. Serve with dressing.

Yield: about 14 cups (7 servings)
One serving: 2 cups
Per serving: 135 calories, 10 grams carbohydrate, 13 grams protein, 5 grams fat
Exchanges: 1 1/2 lean meat, 1 fruit
